CREAM OF MUSHROOMS

If the winter has left you or your loved ones congested and coughing, itchy and irritated, then there is no better time to try out this tasty pick-me-up. If the winter has stripped you of positive thoughts and the will to live, call a shrink. Or call me, I'll make you soup and give you relocation recommendations. To get culinary;



Ingredients;

2 tablespoons butter
1 medium onion, diced
1 1/2 cup mushrooms, chopped in quarters or the such
3-4 tablespoons flour
1 1/2 cup vegetable broth (or chicken broth for the carnivorous)
1 cup milk, skim (or not. or cream, for the metabolismically fast)
dried parsley (I add approximately 1 tablespoon)

Preparation;

1. Melt butter in saucepan on high heat
2. Sauté ze onion for about 3 mins
3. Add the mushrooms and sauté them for about 5 mins
4. Add flour, bit by bit, while stirring to avoid lumps
5. Add the broth, bit by bit and while stirring as well
6. Bring contents to a boil
7. On reach of boiling point, reduce the heat to simmer (lowest) and add milk. Stir
8. Add pepper, salt, and parsley to taste
9. Let simmer for about 10 minutes, soup will thicken.
